Raw-Vegan Chia Pudding with Cashew Buttermilk

I love cashew buttermilk. It tastes like cow buttermilk which I used to love too. You must try this cashew buttermilk! In combination with chia seeds it is delicious and nutritious. It can be eaten at breakfast or anytime.

To prepare this buttermilk you need:

  • 200 grams (7oz) cashews
  • 2 medium lemons
  • 1 liter (34oz) of filtered water
  • 2 capsules of quality probiotics.

Cashew nuts are hydrated in water for 8h. Then they are processed in the blender along with the juice from the 2 lemons and 1 liter of water,   until the mixture has the consistency of fresh milk. With my high-performance blender is easy to achieve the consistency of fresh milk without having to squeeze it through cheesecloth. I prefer my nut milk with whole nuts anyway.

Pour into a jar of a minimum capacity of 1.7 – 1.8l (57-60oz), add the contents of the 2 probiotic capsules, mix and allow to ferment for 24h at room temperature.

In 300-400ml (10-13.5oz) of cashew buttermilk add 3 tablespoons of chia seeds which you mix well and let them absorb the liquid for 20 minutes.

Optionally, you can add a pinch of natural salt, although I do not feel the need for it. If you want it sweet, you can soak a few dates in 400ml (13.5oz) of cashew buttermilk, for 5h, and then process in the blender. Pour the mixture into a bowl and add chia seeds, and maybe some cinnamon too.
