These raw-vegan mushrooms stuffed with various vegetables, spices and delicious avocado dressing, can be served at any occasion. This recipe is so easy and simple to do.
- 4 large mushrooms like Agaricus Bisporus,
- 1 onion,
- 1 carrot,
- 1 bell pepper,
- 1 cucumber,
- 1 minola / orange / mandarin,
- 1 avocado,
- 4 garlic cloves,
- natural salt, pepper, hot chilli pepper powder to taste.
Peel the mushrooms and clean them together with vegetables. Chop them nicely or better use a chopper where you put onion, bell pepper, carrot, cucumber, queues from mushrooms, and what other vegetables your heart desires, as this is an extremely versatile recipe. You only chop them, you do not make a smoothie, so pay attention on how much you chop them.
Place the chopped vegetables in a bowl and add salt, mixing them well. Stuff the mushrooms with this vegetable mixture and prepare the avocado dressing.
In a food processor or even in a chopper, or better yet use a hand blender, blend 1 ripe avocado, slices of a minola / orange / mandarin, 4 garlic cloves, and salt to taste. Process until homogenizing and forming a fine dressing that you pour on the mushrooms.
Season the mushrooms with pepper and hot chilli pepper powder to taste.
