I eat a lot of salads, and as I decided to get the cold-pressed oil out of my raw-vegan diet, thanks to this avocado dressing I do not even miss the oil. I usually use only lemon juice and natural salt anyway, so this avocado dressing is really a treat 🙂 .
This is an absolutely delicious and healthy salad, like most salads are anyway. I will not give you exact quantities because it is not hard to prepare a salad and adapt it to your needs.
For this salad I used: ramsons, parsley, cherry tomatoes, red onion, root celery, bell pepper, cucumber. The avocado dressing is made from 1 ripe avocado, juice from 1/2 lemon and natural salt, using a hand blender.
That’s all! As simple as that, and yet so delicious!
