Raw-Vegan Flavored Walnut Milk

Today I have prepared a super delicious raw-vegan walnut milk. Because I wanted it flavored, I added dates and vanilla.

You need:

  • 200gr (7oz) of walnuts,
  • 100gr (3.5oz) of seedless medjool dates,
  • 1 liter (34oz) of filtered water,
  • 2 teaspoons of vanilla extract,
  • 2 teaspoons of cinnamon powder.

Walnuts must be soaked in the water for 12 hours, dates for about 6 hours, each in a separate bowl.

The next day (because I prefer to let them soak overnight), all the ingredients are processed in a blender, adding also the sweet water left by the soaked dates. I prefer this high-performance blender because it grinds walnuts so well and I prefer not to squeeze the nut milk through a cheesecloth like many do, I like to drink it thicker with whole walnuts.

Serve it with cinnamon on top or with 2 teaspoons of carob powder to a 250ml (8.5oz) cup of nut milk. Put it in a bottle or glass jar (avoid plastic) and keep it in the fridge. I used a 1.8l (61oz) glass jar.
