This is a really tasty and easy to make raw-vegan roll with cacao filling and powdered with cinnamon.
Ingredients for the sheet:
- 250 grams (8.8oz) cashew nuts
- 2 tablespoons medjool date paste
- 2 tablespoons of cold-pressed coconut oil
- 1 teaspoon of vanilla extract
For the date paste you need to hydrate for 6 hours 200 grams of medjool dates without seeds. Then you simply blend them until they form a smooth paste.
Cashew nuts are grinded until you get a flour that tends to bind even in the grinder. Transfer the flour into a bowl, add the date paste, coconut oil and vanilla extract, and knead them very well until you get the simplest and tastiest raw vegan dough.
Lay this dough on a baking sheet in the form of a rectangle measuring 20 cm x 10 cm (8 in x 4 in).
Ingredients for the cacao filling:
- 100 grams (3.5oz) poppy flour
- 2 tablespoons of cold-pressed coconut oil
- 3 tablespoons date paste
- 2 tablespoons of raw cacao powder
- the peel of a half organic orange
- the juice from a half orange
Grind the poppy seeds into a flour and combine it with the date paste, coconut oil, raw cacao powder, orange peel and juice, to get a slightly fluid cream, which you spread over the base sheet.
Roll the cake and put it in the refrigerator for several hours. Take it out, powder it with cinnamon, cut in into slices and enjoy the taste!
The combination of poppy, dates, cacao, cashews and orange can conquer any pretentious gourmet!
